Handy & Hot + Lenoir

Renaissance Charleston Historic District Hotel + Chef Vivian Howard

Assisting DiamondRock Hospitality in revamping the culinary program at the Renaissance Charleston Historic District Hotel, Colicchio Consulting brought chef and restaurateur, Vivian Howard’s, “casual yet refined” concepts to the table. Handy & Hot, an all day breakfast/coffee program, opened in August 2020. The menu offers an abundance of southern regional fare including coffee drinks, teas, sweet and savory hand pies, salads, boozy fruits, and snacks for customers on the go.  Vivian Howard’s full-service restaurant, Lenoir, is slated to open in March 2021.

Temple Court & Augustine

The Beekman Hotel + Chef Tom Colicchio + Keith McNally

Colicchio Consulting assisted the owners of The Beekman, a Thompson Hotel, with curating the landmark structure that was first built in the 1890’s. Considered one of the first skyscrapers built in Manhattan, the building features an open atrium in the center with a pyramidal skylight at the top. Keeping the Victorian aesthetic of the original tower, Colicchio Consulting worked on arranging two concepts that allowed the locals and guests of the hotel to feel like they were transported back in time. Augustine by Keith McNally and Temple Court by Chef Tom Colicchio bring one-of-a-kind dining experiences to the luxurious hotel with seasonal dishes inspired by old classics.

Ferris, Paper, & Good Behavior

MADE Hotel + Charles Seich

MADE Hotel owner Sam Gelin and operator Charles Seich wanted to create more than just another guest amenity. They wanted to cater to locals and visitors that value the experience above all else. Colicchio Consulting curated the dining experience at MADE which now includes Ferris, a New American restaurant from Charles Seich and Executive Chef Tyler Heckman, Paper, a neighborhood coffee shop, and Good Behavior, a stunning 18th-floor lounge with panoramic views of New York City.

Simon Property Group + Chef Tom Colicchio

Colicchio Consulting partnered with Simon Property Group to bring celebrity chef Tom Colicchio to Roosevelt Field. Small Batch, a concept featuring local, seasonal ingredients prepared in a farmhouse-chi environment, opened in 2018 to service the nearby Long Island communities of Garden City, Westbury, Carle Place, and other surrounding areas.

When Miami Beach’s iconic Fontainebleau Hotel could not come to terms with London based restaurateur Alan Yau to bring his groundbreaking Hakkasan to the U.S., Colicchio Consulting was engaged to re-open negotiations and close the transaction.

Kiawah Island Club + Chef Tom Colicchio + Chef Mike Lata

South Carolina’s Kiawah Island Club believed that a formidable culinary presence on site would enhance both its real estate sales prospects and the overall member satisfaction. Belief became reality when Colicchio Consulting assisted the Club in negotiating a long-term arrangement with Chef Tom Colicchio & Chef Mike Lata. Voysey’s by Chef Tom Colicchio and B-Liner by Chef Mike Lata bring inventive classics to the Kiawah Island Club, revealing the essence of local ingredients and coastal influences.

The Cosmopolitan Hotel + Bruce and Eric Bromberg

Colicchio Consulting assisted The Cosmopolitan Hotel and The Blackstone Group in extending the tenure for chef and restaurateur, brothers Bruce and Eric Bromberg. The first Blue Ribbon restaurant outside of New York City, brought a menu of worldly influence and the chef’s culinary education and escapades to Las Vegas locals and guests at the Cosmopolitan.
